Ingredients

 Coconut extract1/3 tsp
 Eggs1, raw
 Oat bran1 Tbsp
 Skimmed milk1 cup
 Splenda2 packets

Instructions

Add all ingredients except oat bran to a bowl and whisk together.

Put oat bran on the bottom of a glass oven container and pour in the liquid ingredients.

Place in a water bath (set the custard mix filled container in a larger dish of equal depth and fill with water up to one inch of the custard dish).

Bake for 1 hour at 350F or until knife comes out clean...

Variations in ingredients can include 1 rounded Tbsp of fat free ricotta cheese and different extracts can be used to achieve a variety of flavours.

Dairy!

Ideally dairy products should be 0% fat, but up to 2% is allowed as long as it has no added sugar.

Dairy should also be kept down to a total of 1kg per day.
