Let sit for 15-20 minutes.
Peel eggs and slice in half lengthwise, placing egg yolks in a small bowl.
Mash the yolks, add mustard (yellow or dijon, whatever flavor you prefer) and yogurt.
Salt and pepper to taste.
Fill the egg white halves with the yolk mixture and dust with paprika if desired.
