Ingredients

 Artichoke2, marinated and chopped
 Eggs4
 Garlic cloves1, crushed
 Lemon zest1
 Onions1, finely sliced
 Spinach250g, frozen and chopped

Instructions

Gently sauté onion in a non-stick fry pan until it starts to colour.

Add crushed garlic, lemon zest, artichoke, salt and pepper and fry to heat through.

Add thawed spinach and cook for 4-5 minutes to let the flavours combine.

Make 4 holes in the mixture and gently crack the eggs into the holes.

Cook on a medium heat until the eggs are cooked to your liking (around 5 minutes for firm whites and soft yolks).

Serve half the spinach and two eggs for each person.
