 Baby Spinach1 cup
 Chicken broth (low fat)1/2 cup
 chopped parsleyto taste
 Dijon mustard1 tsp
 Fat Free Sour Cream1/2 cup
 Garlic powderto taste
 Salmon2 6-8oz pieces
 Salt & Pepperto taste
 Scallionsto taste



Place salmon with skin side down in oven @ 350F degrees for 30 minutes or until cooked through.


In a seperate pan simmer dijon mustard, seasonings, and chicken broth.


In a separate pan, Sautée spinach in a pan with water & seasonings


When salmon is finished, take dijon off heat and add in the sour cream. Whisk until smooth.


Place spinach on plate, then salmon, & top with creamy sauce! Enjoy :)
